Grilled fruit skewers with chipotle chocolate sauce

 



Yield: 4 servings

 

1 # pineapple (1 dice)

Wooden skewers soaked in water for 20 minutes

Vegetable oil for brushing

4 oz salted and roasted peanuts (chopped)

 

cup heavy cream

5 oz milk chocolate (chopped)

2 chipotle peppers in adobo sauce (finely chopped la costena brand)

Pinch of salt

 

Preheat a grill or grill pan over medium heat

Bring cream to a boil with chipotle peppers and salt

Turn the heat off and let it steap for 10 minutes

Strain cream into a clean pan and bring to a boil

Pour hot cream over chocolate and stir until dissolved, keep warm while grilling pineapple

Skewer pineapples on wooden skewers

Brush with vegetable oil and grill on 2 min/ side until grill marked

Pour sauce over skewers and garnish with chopped peanuts

 

Notes

My grandma always made a pineapple up side down cake that brought a smile to my face. As my mom never let me had food in the house this was a rare treat. The carmelization comes from grilling and the spicy chocolate sauce works really well.
