El-vez Sandwich

Yield: 4 Sandwiches

1 # cream cheese (room temperature)

1 # hickory smoked bacon (the best you can buy)

1 tsp. maple flavoring

3 tbsp. maple syrup

1 lemon

Salt (pinch of kosher)

½ c Peanut butter (your choice, chunky or smooth)

2 large bananas

Bacon fat or butter

8 slices of white bread

1.) Pre-heat oven to 350

2.) Cook bacon in oven until crispy and well done, reserving bacon fat

3.) Chop bacon and combine with; maple flavoring, syrup, juice of lemon, salt and cream cheese

4.) Slice bananas in half then into slices

5.) Spread half of the bread pieces with peanut butter

6.) Spread the other slices with the cream cheese mixture

7.) Assemble sandwiches by spreading banana slices onto peanut butter then topping with other slice of bread

7.) In a large sauté pan add a tbsp. of reserved bacon fat and lightly toast sandwiches on both sides over medium high heat


This is my ultimate tribute to the king and or the Mexican Elvis impersonator el-vez. I’ve tried this with deep fried plantains, bacon, sour cream, and peanut butter but it was not meant to be. The cream cheese adds a layer of white trashiness and richness and carries the maple and bacon flavors to the right level of sweet/savory. You get a little bit of breakfast, little bit of dessert, and party in each bite.
