
Hominy
Hummus
Yield:
2 cups
1 can
of white hominy( approx 20 oz)
1 tbsp
minced garlic
1.5 tsp
cumin
1 tsp
syracha
1 lime
juiced
½ bunch
of cilantro chopped
½ cup
chicken stock or water (if needed)
Salt
and pepper
4 pita
bread cut in quarters
1.) Add
all ingredients to the bowl of a food processor and pulse until incorporated and
lightly chunky.

Serve with pitas
I like
deep frying the pita’s making them nice and greasy. This is a good way to introduce hominy
outside of the tradition posole. It adds
an interesting bite and stays slightly al dente. I think subbing 1 chipotle in adobo sauce
would make this hummus sing on your palate.
